Dandelion salad with bacon cider dressing and quail eggs – a depression era delicacy. My husband curses these little yellow beauties when they pop up in the yard; but I’m excited to have an excuse to cook up some bacon.
At my grocery store, I find them in the produce section, not by the regular eggs. Note: my seven year old can down 6 eggs in about 2 minutes, just so you know. If you have egg eating children, you might want to buy extra.
- 1 batch dandelion greens
- 1 pound bacon (just kidding - you only need about 8 pieces. 3 to eat outright and 5 on the salad)
- 3-4 quail eggs
